Tomato, Basil and Chevre Bruchetta

Tomato-Basil-Goat cheese Bruchetta

This is something I eat often during the summer as a lunch or dinner entree.

This is also a dish where I happen to think more is better.

Sourdough wheat or white bread cut into 2- 1-inch slices

Rub bread with olive oil and season with salt and pepper. Grill on your bar-b-que grill until browned.

2 tomatoes, sliced in thick rounds

2 cloves of garlic, crushed

5 basil leaves , cut into thin slices

coarse sea salt and fresh ground pepper

1 Tablsp of Extra virgin olive oil

1 T good balsamic vinegar

Marry the above gently in a glass bowl. Pour over grilled bread and top with cheese.

1/2 log of Avalanche or Haystack Chevre cut into thin rounds

A perfect Summertime Meal combined with Roasted Chicken and Arugula Salad!
