Crispy little flat wafer type cookie.
Combine in a bowl;
1-1/4 cups rolled oats
1 T spelt or wheat flour
1/2 cup succanet or rappadura
1/4 cup unsweetened shredded coconut
2 Tablsp lightly toasted pine nuts
1/4 tsp cinnamon
1/4 tsp salt
Add;
1 egg, beaten
4 T of melted butter (1/2 stick)
1/4 tsp Vanilla
Drop by spoon at least 2 inches apart on buttered cookie sheet and flatten with a fork. Bake for 10-12 minutes at 350 and let cool on sheet for a few minutes to set before moving to a wire rack to cool completely
