Frying Batter
I use this method a lot. It takes to any firm white fish ( bass, wild cod, grouper, red snapper, etc) or chicken breast. Put on a pot of brown rice and trim up your broccoli in advance because this one goes quick.
After washing your fish or chicken in cold water, pat it dry with a few paper towels. Cut into pieces about 1-2 inches wide and 3-4 inches long. Season with lemon juice, salt, pepper and paprika. Set up three pans for dipping. In one pan put 1 cup of Spelt flour, seasoned with salt, pepper and paprika. In another pan put 1 egg and 1 cup of milk. In the third pan, put 2 cups bread crumbs, 2 T parsley and 1 cup of grated Parmesan. Heat a heavy bottomed saute pan over a med-high flame on stove. Add a little butter and olive oil. Start dipping your chicken or fish. Firs, both sides get coated with flour. Next, both sides go into the milk/egg mix. Last dip goes onto both sides with the bread crumb/parmesan mix. Lay fish or chicken into hot oil. Saute chicken about 5-7 minutes each side. Don’t turn them until they are nicely browned. Saute fish 5 minutes on each side. Voila! Crispy healthy fried food in a flash. Get ready to feel the love!
