Tasty Combinations!
Combine the following in a heavy bottomed pot with a tight fitting lid:
2 cups of Lundberg organic white Basmati rice
3 cups of organic chicken stock
2 Bay leaves
1 tsp of Sea Salt
1 Tblsp Butter or olive oil
1/4 cup of minced white onion
pinch of saffron
Let come to a rolling boil, then put the lid on and drop flame down to a simmer. Let simmer for 20 minutes and turn off, leaving the lid on for another 5 minutes.
Next, add;
3/4 cup of chopped toasted almonds
1/4 cup of raisins
1/4 cup of chopped dates
1/4 cup of dried cranberries or cherries
1 Tbsp of chopped Italian parsley
1 cup of crumbled Feta cheese
You will need a green salad to round out these flavors and provide some roughage and colors. I start with the best organic field greens and spinach leaves I can find. One of my favorite dressings is very simple, a squeeze of lemon and a drizzle of good olive oil or nut oil. Sea Salt & cracked pepper to taste. Go ahead and serve it along the side of the salmon and rice. We had plenty to eat but the fellow has a sweet tooth. It took me 2 1/2 months to get this cookie recipe down. It is so good.
